HOW IT ALL BEGAN:
Trash Fish Dinners were dreamed up by member chefs during our 2011 Sustainable Food Summit in New Orleans. Below are a few dinner highlights.
TRASH FISH BOSTON: We hosted the first Trash Fish Dinner on March 10, 2013 at Chef Michael Leviton’s Area Four in Cambridge, MA. There, nine chefs teamed up to serve a multi-course, family-style meal featuring under-appreciated seafood species like monkfish, sea robin, and blood clams. The event was so successful (read more about Trash Fish Boston here), that we soon found ourselves taking Trash Fish on the road across the country.

TRASH FISH CHICAGO: In May 2013, 10 chefs teamed up in Chicago at chef Paul Fehribach’s Big Jones to host another Trash Fish dinner. Working with our environmental partners at Shedd and Monterey Bay Aquariums, chefs served up invasive species like Asian carp and rainbow smelt – as well as other fish such as sea speckled trout and bluefish. TRASH FISH LAS VEGAS: On July 22, 2013, seven chefs teamed up at Border Grill Las Vegas to host a Las Vegas Trash Fish Dinner. Menu highlights there included Chef Rick Moonen’s bycatch bouillabase, sea robin ceviche, and surf clam sashimi. You can read more about Trash Fish Las Vegas here.
TRASH FISH PDX: On November 12th, 2013, Chef Cathy Whims of Nostrana and Oven & Shaker in Portland, OR hosted the fourth Trash Fish Dinner. The menu included species like the wolf eel, pacific skate wing, and sand dabs. Local artists and chefs also teamed up to auction off Trash Fish art and special meals! TRASH FISH LOS ANGELES: On March 10, 2014 Trash Fish went to Los Angeles. Led by a Colorado chef with an LA past, Kelly Whitaker, Trash Fish Los Angeles was a great success. Read more about the event here.
TRASH FISH CHARLESTON: On June 5th, 2014, Chefs Collaborative returned to the city that we fell in love with during the 2013 Summit. The Trash Fish Dinner Charleston brought together some of the cities top culinary talent to celebrate the underappreciated treats of the ocean.
