Craig, can you tell us a bit about Zebra’s Bistro and Wine Bar?

Zebra’s Owner Craig Neubecker: Zebra’s Bistro is an upscale yet casual bistro in Medfield, Mass. serving innovative new American fare from an a-la carte menu designed for guests to create their own dining experience. Zebra’s also offers a charcuterie, local cheese, and raw bar.

A majority of the produce comes straight from owner Craig Neubecker and Chef Brendan Pelley’s own gardens, as well as various local farms. The chef keeps things new by incorporating these fresh local and seasonal ingredients into recipes using classic French techniques with inspiration from an array of cultures – including Spanish, Japanese, Italian, and Chinese. Zebra’s is also home to a cozy wine bar which serves an extensive wine list as well as local craft beers and a full bar.

Why do you choose to engage with sustainability?

Craig Neubecker: On a personal, moral level and on a business values level it is simply wrong to destroy, use up, or consume anything that harms our future generations from meeting their needs.

What are your Earth Dinner plans?

Craig Neubecker: Zebra’s Executive Chef Brendan Pelley is teaming up with local farmers Christy Raymond and Chris Kantlehner from White Barn Farm in Wrentham, Mass. All details are here.

On Wednesday, April 17 you can join Zebra’s Bistro for an informative evening of tasting local fare during the Chefs Collaborative Earth Dinner. Executive Chef Brendan Pelley will host a four-course dinner composed entirely of local foods, from farmed produce to wild foraged edibles, to local seafood, chicken, eggs, and cheese.

In addition, Chef Pelley will be leading White Barn Farm’s farmers Christie and Chris in an open discussion on why consumers should be eating local, as well as discussing why sustainable and organic matter, trends in food (both good and bad), and more.

Developing this idea for the Earth Dinner was almost automatic and easy since it lines up with the core of who we are and what Zebra’s Bistro offers. We hope you’ll join us.

Cost is $40/person. Space is limited, call 508-359-4100 for reservations. For more information, click here.
